Cooking With Miranda - The Perfect Berry Crisp

A few weeks ago, we wrote about a young entrepreneur and her business Doggy On The Go.  As we mentioned, this young lady has another special talent - Cooking. Today, we are proud to debut 'Cooking With Miranda', the first in a series of monthly cooking shows, produced exclusively for DOGONews!

The Perfect Berry Crisp

Ingredients for Filling

3 Bosc Pears* - peeled and chopped to bite-sized chunks

3 cups Blueberries*

1 cup Raspberries*

1/4 cup Sugar

1/4 cup All-Purpose Flour

1/4 Teaspoon Cinnamon

1/2 Fresh Lemon

* The fruits can be adjusted to whatever you and your family like - try using a combination of whatever is in season - those are usually the most yummy!

Ingredients For Topping

1 cup Rolled Oats

1/2 cup All-Purpose flour

1/2 cup Brown Sugar

1/2 cup White Sugar

1 stick Cold, Unsalted Butter, cut into small pieces

Pinch of salt, 1/4 teaspoon Cinnamon

Putting It All Together

Preheat the oven to 350 degrees. Grease a 9-inch oven-proof pie plate with butter. Combine all the fruit into a medium-sized mixing bowl and gently mix in the lemon juice.

Add sugar, flour and cinnamon, toss the mixture lightly and layer it into the prepared pie plate (You can save a little for decoration).

Prepare the topping by combining the oats, flour, two sugars, cinnamon and salt in a bowl. Mix in the butter, until topping resembles coarse meal (you can use a pastry blender, two forks or your bare (clean) hands to do this. Sprinkle the topping evenly over the fruit. Decorate with the remaining fruits.

Place your pie dish on a baking sheet and bake for about an hour in the center section of your pre-heated oven. Your masterpiece is ready when the fruit starts to bubble and the topping looks nice and brown. 

Remove the crisp, let it cool for a few minutes (if you can wait!) and enjoy it as is, with some vanilla ice cream or some freshly whipped cream - Bon Appetite!
