Bored of eating sandwiches at school every day? Then here are some amazingly tasty pasta lunches to add some variety to your meals. And, just like my other recipes they are not only easy to make, but very delicious and of course, nutritious.

Orzo With Mascarpone Cheese

Ingredients

1 cup Orzo or Wheat Macaroni Pasta cooked according to package directions
3 tablespoons Mascarpone cheese

Putting it All Together

Drain the cooked pasta and mix in the Mascarpone cheese until it melts. Add a pinch of salt and pepper to taste and then eat as is, or let your creative juices flow, by adding any vegetables or proteins of your choice. Here are some suggestions:

Southwest Orzo

If you like your pasta with a little kick, add 1/3 cup of your favorite salsa and 1/2 cup canned corn and mix it all in.

Lemon Orzo

grate the skin from one lemon and mix in for a yummy lemony cheesy treat.

Pesto Orzo

Mix in 2 -3 tablespoons of store-bought basil pesto and some halved cherry tomatoes.

The lunch can be prepared the night before - Simply heat it up in the morning, transfer it to your thermos and enjoy at school - Maybe you can even pack some for your parents. They sure will appreciate it. Bon Appetite!
